GINGER AND CINNAMON FITNESS COOKIES
INGREDIENTS
- 220g oat flour or crushed oat flakes
- 60g of raw almonds or hazelnuts or cashews
- 150g pitted dates or plums
- 3 tbsp or 45ml of melted coconut oil / or olive oil
- 80ml coconut vegetable milk
- 1 tbsp cinnamon powder
- 2 tbsp powdered ginger
- 1 teaspoon) of biological yeast
STEP BY STEP INSTRUCTIONS
- Preheat the oven to 180ºC.
- In a food processor, add all the ingredients and grind until it becomes a malleable mass that comes off your fingers (if you don't have a powerful processor, grind the almonds first and then the dates, add all the dry ingredients and finally the liquids until you get the desired consistency. ).
- Place the dough between two sheets of parchment paper and stretch with a rolling pin.
- Cut the dough with a cookie cutter.
- Bake in the oven for 20 minutes in a rectangular shape lined with parchment paper and bake until the cookies are golden.
- Let cool completely.
- Store in a closed glass bottle, they last up to 2 weeks.
