INGREDIENTS
  

PASTA

  • 1 kg approx. unleavened wheat flour
  • 250 ml of warm milk
  • 250 ml of water
  • 125 ml of Oil
  • 20 g of organic dry yeast
  • 2 tbsp of sugar
  • 1 coffee spoon) of fine salt
  • oregano to taste
  • 2 gems to brush

FILLING

  • 500 g ground beef
  • 1 chopped medium onion
  • 2 crushed garlic cloves
  • 1 chopped ripe tomato
  • 2 tbsp of olive oil or oil
  • parsley to taste
  • Salt and pepper to taste
  • 1/2 lemon

STEP BY STEP INSTRUCTIONS
 

PASTA

  • Place the sugar and yeast in a large bowl, mix and then add the warm milk, it cannot be hot milk, it has to be lukewarm. Mix well.
  • Then add the oil, water and mix well.
  • Finally, add the flour little by little until the dough doesn't stick to your hands, and then add the salt, if the dough is still soft, put the flour until it doesn't stick to the hands and you get a smooth and homogeneous dough.
  • Put the dough back in the container and cover with a cloth and set aside for the dough to rise. While it rises, we prepare the filling.

FILLING

  • Heat a pan and add the oil, then the garlic and onion to brown.
  • Then add the ground beef and let it sauté well until all the water is gone from the meat.
  • Then season with salt and pepper and mix well.
  • Then add the chopped tomato and parsley to taste and stir well until all the water is removed and the stuffing is very loose. Then just turn off the heat and wait for the filling to cool before filling the esfihas.

ASSEMBLY OF SFIHAS

  • When assembling the esfihas, sprinkle the surface with flour and place the dough on the surface and make balls of the same size (approximately 60g each).
    Then place all the balls on the bench covered with a cloth so they don't dry out.
  • Stretch the balls with a rolling pin, fill with the ground meat, make the sfihas and place on a tray greased with oil or margarine.
    Cover with a cloth and let rise for about 30 minutes.
  • Once risen, brush with egg yolk and sprinkle oregano on top and bake in a preheated oven at 180º to 200º degrees for 10 to 15 minutes. or until golden.
