Origin of fair cake

The pastel de Feira, originated in Brazil, more specifically in São Paulo, it gained its popularity in 1940.

What is curious is that its name came from the fact that this pastel was sold at fairs at the time, so people named it Fair Pastel and later in some regions of Brazil it was designated Wind Pastel, because the pastel is big and has many empty spaces inside, hence the “wind”.

The pastel itself was created by Chinese immigrants who had been in São Paulo since 1890, however it is in 1940 that they began to gain traction.

But what was its development from 1940 onwards due to? At the end of the second world war, when refugees from the Japanese army came to São Paulo so as not to suffer prejudice from the Brazilian people, they mixed with the Chinese community, thus imitating their way of life.

Thus, one of the habits they imitated in this process was to make fried pastries and thus disguised as Chinese, because for a Westerner it was always difficult to distinguish the Japanese from the Chinese.

With the massification of pastries, many pastry shops opened in São Paulo and in this way made this savory extremely popular. Initially with a Chinese recipe that was based on rice stuffed with pork and vegetables, but due to Brazilian culture, pork was replaced by beef.
