Ingredients you will need

Main Ingredients:

  1. Wheat flourWheat flour should be unleavened.
  2. ButterI usually use salted butter because it gives the dough a special flavor.
  3. Natural yogurt: I recommend using any brand of natural yogurt.
  4. EggsI usually use medium eggs so it's not too big and the dough doesn't get soft.
  5. Grated ParmesanI use any brand of grated Parmesan to add a special touch to the pasta, but I recommend that you buy whatever you find in the market.
  6. Olive oilI like to use it to make quiche recipes. Gallo extra virgin olive oilbecause it's better quality than inferior oils. If you don't want to use olive oil, you can replace it with oil.
  7. Cod fishI usually buy desalted cod which makes it easier to prepare the quiche recipe. Alternatively, you can buy salted cod and desalt it yourself.
  8. Milk cream: I like to buy cream that has an amount of fat from 30%
  9. mozzarella cheeseI use grated cheese because it's more for a homogeneous mixture in the quiche topping.

How to make cod quiche

Although this dish is relatively simple to make, it goes through 4 stages, namely:

  • Dough
  • Filling
  • Topping
  • Mounting

When you make a cod quiche, the cod doesn't have to be high quality, it just needs to be medium or even thin slices, because the cod will be shredded, so there's no point in spending a lot of money on high slices of cod, which are much more expensive.

Preparing the Dough (Part I)

The preparation of quiche dough It's simple: mix all the ingredients together and knead with your fingertips (very important) until you get a soft, elastic dough. This process can take between 10 and 20 minutes, but it will depend on each case.

When it's ready, wrap it in plastic wrap and leave it to rest for 15 minutes in the fridge.

Preparing the Filling (Part II)

Today I'm going to make a cod quiche, so the filling is cod, but... if you want to make a quiche with another filling you can do so without any problem. Some examples are: 

Chicken, ham, minced meat, tuna, spinach, etc...

In first placesauté the onion and garlic in the hot oil until they are transparent.

Now let's prepare the quiche topping, which is one of the most important steps in the recipe.

Mix the cream, eggs, cheese, nutmeg and season with salt and pepper to taste.

Quiche Assembly (Part IV)

Then we move on to the last part of the quiche, which is the assembly. For me it's the best part, because it's almost finished.

First, Slowly roll out the dough and line the bottom and sides of the removable tin.

SecondPierce with a fork, then spread the filling evenly over the top and sprinkle with Parmesan.

Thirdbake in a preheated oven at 180 degrees for 15 minutes, or until the quiche is baked through. This will depend on the power of your oven. So take this point into account.

Fourth, remove and let cool for 5 to 10 minutes, then unmold and serve.

  • Have the ingredients ready. Before you start preparing this recipe, separate all the ingredients and place them in containers.
  • Use a pan with a removable bottom. It is important when assembling the quiche to use a removable bottom pan to make it easier to remove the quiche, otherwise it will break.
  • Desalt the cod. If you want to desalt the cod, simply place the cod in cold water skin side up and change the water 3 times a day (approximately every 8 hours) and keep in the fridge for 2 to 3 days.

Can I make a vegan quiche?

Yes, it's possible, as long as you change all the ingredients, from the dough to the filling and topping with ingredients suitable for a vegan quiche.

INGREDIENTS
  

Dough

  • 250 grams of unleavened wheat flour (sifted)
  • 140 grams of butter without salt
  • 1 tbsp of natural yogurt
  • 1 lightly beaten whole egg
  • 1/4 coffee spoon of baking powder
  • 1 pinch of salt
  • 1/4 cup of tea grated parmesan

Stuffing (can be made with tuna, chicken, ground beef, ham, spinach, etc.)

  • 1 Grated medium onion
  • 2 crushed garlic cloves
  • 2 tbsp of oil
  • 2 cups (tea) shredded cod fish
  • 2 tbsp of chopped parsley
  • Salt and black pepper (ground)

Topping

  • 200 ml of fresh cream
  • 2 lightly beaten eggs
  • 100 grams coarsely grated mozzarella cheese
  • 100 grams cream cheese
  • 1 pinch of nutmeg powder oralada
  • Salt and black pepper to taste

STEP BY STEP INSTRUCTIONS

  • Mix all the ingredients together and knead with your fingertips until you have a soft, elastic dough.
    Wrap in plastic wrap and leave to rest for 15 minutes in the fridge.

Filling Preparation

  • Saute onion and garlic in hot oil until translucent.
  • Mix the shredded cod, check the salt and seasonings, add the chopped parsley, mix again and remove from the heat.

Coverage Preparation

  • Mix the cream, eggs, cheeses, nutmeg and season with salt and pepper to taste.

Quiche assembly

  • Roll out the dough, line the bottom and sides of a removable rim pan.
  • Pierce with a fork, distribute the filling evenly, spread the frosting over the top, sprinkle with the Parmesan.
  • Bake in a preheated oven at 180ºC for 15 minutes. or until cooked.
  • Remove, let cool slightly, unmold and serve.
