- 225 g of wheat flour
- 175 g butter with cold salt
- 150 ml of ice water
- 1 pinch of salt
Sift the flour and salt into a bowl. Add 3 tablespoons of butter and crumble between your fingers with the flour until the mixture resembles bread crumbs. Water with 1/2 cup (tea) of water and, with a knife with a round blade, mix well, adding more water if necessary.
Place the dough on a floured surface and knead well. Wrap in plastic wrap and place in the fridge for 15 minutes.
Roll out the dough in the shape of a 30x10cm rectangle. Add 3 more tablespoons of butter and distribute in pieces, evenly over two-thirds of the dough, leaving a 1cm margin at the edge.
Fold the unbuttered third of the dough over the center and the buttered third over the center. Pinch the ends so the butter doesn't come out. Wrap in plastic wrap and place in the fridge for 10 minutes.
Repeat the process of rolling out the dough and folding it (without adding butter). Roll out the dough two more times, with the ends you pinched lengthwise, using the rest of the butter each time. Roll out and fold the dough into a roll and wrap in plastic wrap and refrigerate for at least 1 hour before using.
