- 40g chopped onion
- 1 crushed garlic clove
- 100g leeks in slices
- 1 tbsp of oil
- 150g leftover shredded chicken
- pepper to taste
- 3 medium eggs

In a heated skillet, put the oil and sauté the onion, garlic and leek. Add the shredded chicken, season with pepper and mix well.
Then, in a bowl, beat the eggs with the salt and milk and pour the mixture over the sautéed chicken, stirring gently, do not overcook the eggs to become creamy.
Add the grated zucchini and gently fold into the mixture. Cook for 1 to 2 minutes just to warm up and make the zucchini crispy.
Then, remove from the heat, sprinkle with fresh chopped parsley, add the olives and cherry tomatoes and serve immediately.
