Ingredients

  • 1 kg and 1/2 already boiled mocotó;
  • 600 g cassava peeled and cut into pieces;
  • 2 chopped medium onions;
  • 3 cloves of crushed garlic;
  • 1/2 chopped green pepper;
  • 4 bay leaves;
  • Salt and spices to taste.

Instructions

  • First, take a pan and cook the cassava for 20 minutes or until it softens;
  • Put it aside and in the same pan put olive oil, with the onion and garlic;
  • Once everything has sautéed well, add the cooked mocotó and let it fry;
  • Then add the tomato, pepper, bay leaves and seasonings;
  • Cover with water and let everything cook over medium heat for about 40 minutes;
  • Now, remove the mocotó with part of the cooking water and blend it in a blender;
  • Once it is well mixed, gradually add the cassava;
  • Place the mixture in the pan with the remaining water and the other ingredients;
  • Stir everything very well over medium heat and control the amount of seasoning;
  • Finally, when the broth is ready, turn off and serve.
