- 1 kg and 1/2 already boiled mocotó;
- 600 g cassava peeled and cut into pieces;
- 2 chopped medium onions;
- 3 cloves of crushed garlic;
- 1/2 chopped green pepper;
- 4 bay leaves;
- Salt and spices to taste.
First, take a pan and cook the cassava for 20 minutes or until it softens;
Put it aside and in the same pan put olive oil, with the onion and garlic;
Once everything has sautéed well, add the cooked mocotó and let it fry;
Then add the tomato, pepper, bay leaves and seasonings;
Cover with water and let everything cook over medium heat for about 40 minutes;
Now, remove the mocotó with part of the cooking water and blend it in a blender;
Once it is well mixed, gradually add the cassava;
Place the mixture in the pan with the remaining water and the other ingredients;
Stir everything very well over medium heat and control the amount of seasoning;
Finally, when the broth is ready, turn off and serve.
