Ingredients

  • 3 peeled medium sweet potatoes;
  • 3 cups of tea) of vegetable broth;
  • 1 chopped red onion;
  • 1 clove of raw garlic;
  • 200 g of vegetables of your choice optional;
  • 200 g of shredded chicken optional;
  • 200 ml of heavy cream;
  • Salt and spices to taste.

Instructions

  • First saute in a pan with olive oil the onion and garlic;
  • If you use shredded chicken or vegetables, add them when everything is browned;
  • Once everything is cooked, add the sweet potato, the vegetable stock and 500 ml of water;
  • When it softens, turn off the heat and beat everything in a blender with the heavy cream;
  • Return the mixture to the pan and add the salt and seasonings, stirring well;
  • Finally, let it cook for another 10 minutes, turn off the heat, and serve.
