- 200 g arborio rice for risotto
- 200 g chopped sausage
- 1 dash of olive oil
- 1/2 tbsp of butter
- 1/2 finely chopped medium onion
- 1 crushed garlic clove
- 60 g of tomato sauce
- parsley to taste
- Black pepper
- 500 ml of beef stock or bacon (hot)
- 1/2 Cup of tea) of white wine
- 1 tbsp grated parmesan cheese
Heat a pan and add the olive oil, and fry the chopped sausage.
Once fried, remove from the pan and set aside.
Then add the butter, garlic, onion, and let it brown slightly.
Sauté the rice until very dry, for 5 minutes.
Add the white wine and sauté until all the alcohol has evaporated.
Add the tomato sauce and black pepper, mix well and start adding water little by little, always stirring so the rice releases the starch.
Once the rice is to your liking, add the fried sausage, parsley and Parmesan cheese.
