Ingredients

  • 1 Chicken breast (medium) cooked and sliced
  • 1/2 pineapple
  • 1 medium avocado
  • 1/4 small red onion or shallot
  • 2 tbsp of corn
  • 125g fresh mozzarella cheese
  • 1 tbsp of pomegranate seeds
  • 1 tsp chia and flax seeds
  • 1 teaspoon) of honey
  • 1 lemon juice
  • salt to taste

Instructions

  • Cook the chicken breast with water and salt, after cooking cut it into small thin slices. Reserve.
  • On a platter, place the chopped pineapple.
  • Cut the avocado and red onion into thin slices and place on top of the pineapple.
  • Now place the chopped chicken, spreading the pieces well all over the platter.
  • Add the corn, fresh mozzarella and pomegranate seeds.
  • Season everything with lemon juice and honey, salt to taste and garnish with chia and linseed.
