HEALTHY LEMON AND CHIA COOKIES

Ingredients

  • 200g oat flour or crushed oat flakes
  • 50g de açúcar de côco ou outro adoçante
  • 1 to 2 tbsp of chia seeds
  • 1 teaspoon) of yeast for cakes
  • Raspas de 1 limão a quantidade depende do gosto
  • pinch of salt
  • 60ml de bebida vegetal aveia, côco ou amêndoa
  • 2 tbsp de suco de limão (15ml + 15ml)
  • 2 tbsp de azeite ou óleo de côco derretido

Instructions

  • Preheat the oven to 180º and line a large rectangular shape with parchment paper.
  • Grind the oat flakes until they become flour.
  • In a large bowl, combine the dry ingredients: oat flour, coconut sugar, chia seeds, yeast, zest of 1 lemon and a pinch of salt. Mix everything.
  • To this dry mixture we add the vegetable drink, the olive oil and the lemon juice. We mix everything very well until it forms a moldable dough.
  • Note: The dough should not be too liquid (grasp by hand), but also not too dry (impossible to create balls). The ideal is to mix everything and let it rest for 10 minutes so that the flour absorbs some of the moisture.
  • With our hands we are going to make balls. We can use a spoon meter as a measure for the balls.
  • We place the balls in a rectangular shape lined with parchment paper and with a fork we will flatten them to create the shape of cookies or cookies.
  • Optional: add lemon zest on top of the cookies and a little coconut sugar.
  • Note: you can roll out the dough with a rolling pin and cut the cookies with a mold (they will be crispier). The cookies have the texture of cookies (softer) due to the shape.
  • Bake in the oven for about 15 to 20 minutes (until golden).
  • Allow to cool completely before storing in an airtight glass jar.
