- 1 ½ cup (tea) of parboiled or steamed rice (180g)
- 400 g of baked beans
- 1 finely chopped onion
- 2 crushed garlic cloves
- 2 bay leaves
- 3 tbsp coriander (chopped)
- 1 tbsp of tomato pulp
- 50 ml of oil
- salt to taste
- 3 cup (tea) of boiling water
In a pan put the oil, onion, garlic and bay leaves. Let it sauté.
Add the rice and let it fry a little, add the tomato pulp, add the 3 cups of boiling water, let it cook for 10 minutes with the lid ajar.
Add the beans to the rice and a little more water if necessary, adjust the salt and cook for another 5 minutes. Once cooked, add the chopped coriander.
Serve with cod fritters.
