Ingredients

  • 1 ½ cup (tea) of parboiled or steamed rice (180g)
  • 400 g of baked beans
  • 1 finely chopped onion
  • 2 crushed garlic cloves
  • 2 bay leaves
  • 3 tbsp coriander (chopped)
  • 1 tbsp of tomato pulp
  • 50 ml of oil
  • salt to taste
  • 3 cup (tea) of boiling water

Instructions

  • In a pan put the oil, onion, garlic and bay leaves. Let it sauté.
  • Add the rice and let it fry a little, add the tomato pulp, add the 3 cups of boiling water, let it cook for 10 minutes with the lid ajar.
  • Add the beans to the rice and a little more water if necessary, adjust the salt and cook for another 5 minutes. Once cooked, add the chopped coriander.
  • Serve with cod fritters.
