- 150 g shelled shrimp;
- 250 g of quinoa;
- 500 ml of chicken stock;
- 4 ml of white wine vinegar;
- 4 diced carrots;
- 100 g of zucchini cut into cubes;
- 40 ml of honey;
- 30 g of cashew nuts;
- Walnuts, salt and pepper to taste
In a saucepan, boil the chicken stock together with the prawns and salt;
After about 10 minutes, turn off the heat and leave to cool;
Then, in a separate pot, cook the quinoa, letting it boil for about 15 minutes;
Turn off the heat and let cool;
In a bowl, combine the honey and vinegar, stirring well until the mixture is smooth;
Once this is done, add the quinoa, the prawns and the other ingredients, mixing everything together for a few minutes;
To finish, season with salt and pepper to taste and serve.
