Ingredients

  • 150 g shelled shrimp;
  • 250 g of quinoa;
  • 500 ml of chicken stock;
  • 4 ml of white wine vinegar;
  • 4 diced carrots;
  • 100 g of zucchini cut into cubes;
  • 40 ml of honey;
  • 30 g of cashew nuts;
  • Walnuts, salt and pepper to taste

Instructions

  • In a saucepan, boil the chicken stock together with the prawns and salt;
  • After about 10 minutes, turn off the heat and leave to cool;
  • Then, in a separate pot, cook the quinoa, letting it boil for about 15 minutes;
  • Turn off the heat and let cool;
  • In a bowl, combine the honey and vinegar, stirring well until the mixture is smooth;
  • Once this is done, add the quinoa, the prawns and the other ingredients, mixing everything together for a few minutes;
  • To finish, season with salt and pepper to taste and serve.
