Ingredients

  • 250 g quinoa seed or quinoa grains;
  • 1 medium carrot cut into cubes;
  • 1 medium zucchini cut into cubes;
  • Lettuce leaves to taste;
  • 2 small cucumbers cut into slices;
  • 12 chopped olives;
  • 1 chopped red pepper;
  • 4 tbsp of extra virgin olive oil;
  • 2 tbsp of balsamic vinegar;
  • Salt and seasonings to taste

Instructions

  • First, take a large pan and cook the vegetables in water;
  • Once they are ready, turn off the heat and leave them to cool;
  • Meanwhile, take a bowl and place the lettuce leaves and quinoa;
  • Then add the vegetables and mix everything very well;
  • Now add the olives, vinegar, oil, salt and seasoning;
  • Mix everything until the salad has the desired flavor and can be served.
