Portuguese style cod salad

Ingredients

  • 1 kg cooked and shredded desalted cod
  • 1,3 kg potatoes cut into cubes
  • 1 yellow pepper (medium) cut into strips
  • 1 red bell pepper (medium) cut into strips
  • 20 pitted olives cut into slices
  • 1 onion (medium) grated
  • Green smell to taste (parsley, chives and coriander)
  • Salt if necessary
  • olive oil to taste

Instructions

  • Cook the desalted cod in boiling water for 10 minutes, drain, then shred into flakes and set aside.
  • Peel, cut into cubes and cook the potatoes in the water that cooked the cod, let it cook “al dente”, as soon as they are cooked, drain and reserve.
  • In a heated pan, put a generous thread of olive oil and sauté the grated onion, letting it wilt a little.
  • Then place the shredded cod next to the sautéed onion, mix well letting it sauté a little and turn off the heat.
  • Now place the cubed potatoes in the pan next to the onion and the cod and mix.
  • Put the peppers in the same hot water as the potatoes to bring to a boil.
  • Place a drizzle of olive oil in the bottom of the salad bowl and then the cod and potatoes mixture and place the sliced olives on top, mixing well. Put the green smell on top and finally the drained peppers in the salad.
  • Then just serve. Enjoy your food!
