- 1 Medium cauliflower;
- 1 medium onion, chopped;
- Salt and spices to taste;
- 1 Clove of garlic;
- 1 Vegetable or meat broth;
- 3 tbsp of olive oil;
- 1 Bay leaf;
- Parsley leaves and chopped leek to taste.
First, cut the cauliflower into medium-sized pieces and wash well under running water;
Chop the garlic clove and the onion and put all the ingredients in a pan;
Let them cook over medium heat until the onion wilts and the garlic and cauliflower brown;
Add the bay leaf and seasonings, parsley and leek and stir for 1 minute;
Now add the broth of your choice to the mixture and bring it to a boil;
Then, wait until the cauliflower is very soft and turn off the heat;
Finally, put the mixture into a blender and blend everything for 3 minutes.
