Ingredients

  • 1 Packet of dried peas (those 500 gram packets);
  • 2 Sliced calabrian sausages;
  • 1 Small onion, chopped;
  • 1 Liter Of water;
  • 1 Clove of garlic;
  • Salt and pepper to taste;
  • And also a little oil to saute the ingredients;

Instructions

  • Wash the peas well and soak them for about 1 hour;
  • In a pan, use a little oil to fry the sausage;
  • Add the onion and garlic and saute; 
  • Boil the water in a pot separately;
  • Now you will need a pressure cooker. So, put the boiling water, the peas, and the sauteed calabresa. Then bring it to the boil;
  • Wait for the pressure to build up (when the feather pin starts to squeak and wobble);
  • After that, let it cook for about 25 minutes;
  • Turn off the heat and let the pressure come off;
  • Add salt and pepper to taste and serve;
  • If you don't want the soup to get too thick, add more boiling water until it is the consistency you find ideal.
