Ingredients

  • 500 g pumpkin of your choice;
  • 1 leek butcher;
  • 1 chopped medium onion;
  • 2 cloves of crushed garlic;
  • 1 small tomato;
  • 2 tbsp of light curd cheese;
  • 50 ml of coconut milk;
  • Salt and spices to taste.

Instructions

  • After soaking the pumpkin, put it in a pan of water to cook;
  • When the pumpkin is soft, put it in a blender with the cooking water;
  • Now use the same pan and put the onion, garlic and tomato in the pan with olive oil;
  • Once everything is sautéed, add the spices, coconut milk and curd cheese;
  • Mix everything together until you have a homogeneous mixture;
  • Add the pumpkin cream and cook for about 10 to 15 minutes, stirring constantly;
  • Finally, turn off the heat and you can serve your custard.
