- 500 g pumpkin of your choice;
- 1 leek butcher;
- 1 chopped medium onion;
- 2 cloves of crushed garlic;
- 1 small tomato;
- 2 tbsp of light curd cheese;
- 50 ml of coconut milk;
- Salt and spices to taste.
After soaking the pumpkin, put it in a pan of water to cook;
When the pumpkin is soft, put it in a blender with the cooking water;
Now use the same pan and put the onion, garlic and tomato in the pan with olive oil;
Once everything is sautéed, add the spices, coconut milk and curd cheese;
Mix everything together until you have a homogeneous mixture;
Add the pumpkin cream and cook for about 10 to 15 minutes, stirring constantly;
