Ce n'est pas une science super complexe, mais il y a plusieurs points \u00e0 prendre en compte.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Morue sal\u00e9e congel\u00e9e vs morue sal\u00e9e s\u00e8che<\/h3>\n\n\n\n<p>Lorsque nous choisissons la morue que nous allons utiliser dans notre recette, nous devons savoir quel type de morue utiliser, que ce soit de la morue s\u00e8che sal\u00e9e ou de la morue dessal\u00e9e surgel\u00e9e.<\/p>\n\n\n\n<p><strong>Morue dessal\u00e9e surgel\u00e9e<\/strong> - Cette morue est d\u00e9j\u00e0 dessal\u00e9e et pr\u00eate \u00e0 \u00eatre utilis\u00e9e dans n'importe quelle recette. En revanche, cette morue est g\u00e9n\u00e9ralement plus ch\u00e8re que la morue s\u00e9ch\u00e9e.<\/p>\n\n\n\n<p>Si votre budget le permet, je vous recommande d'utiliser de la morue surgel\u00e9e et dessal\u00e9e.<\/p>\n\n\n\n<p><strong>morue sal\u00e9e s\u00e8che<\/strong> - Ce cabillaud doit \u00eatre dessal\u00e9 et plus le cabillaud est gros, plus il faudra de jours pour le tremper et le dessaler.<\/p>\n\n\n\n<p>Il existe 4 types de cabillaud :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Cha\u00eene<\/li>\n\n\n\n<li>Cultiv\u00e9<\/li>\n\n\n\n<li>Grandes<\/li>\n\n\n\n<li>Sp\u00e9cial<\/li>\n<\/ul>\n\n\n\n<p>Le processus de trempage est long (36 \u00e0 72 heures) et il faut changer l'eau 3 \u00e0 4 fois par jour, sans compter que l'odeur de la morue dans le r\u00e9frig\u00e9rateur est intense.<\/p>\n\n\n\n<p>Si vous pr\u00e9f\u00e9rez \u00e9conomiser de l'argent (parfois beaucoup), je vous conseille d'opter pour de la morue sal\u00e9e s\u00e9ch\u00e9e.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/lh5.googleusercontent.com\/XyY8RxBAcqrU1Nhga8BMcMYw4CxLOFHt_mqLv0w2D8HK74-YdGSgiiaJ72AHkVU9i0c9UYoS6P1loeaS7zQ0z-74H3Xv_yneIi0vJSF1XzsKr-1duyMvBMG_dY-YzrkN2cM3BZnGcor5tkxKQRiIxDmhB72CDZPEyMjy4cxZizCUOJ3uaf2BmX2HsQ\" alt=\"Cabillaud \u00e0 la cr\u00e8me au four\"\/><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\">Quel type de cabillaud choisir pour notre recette<\/h3>\n\n\n\n<p>Pour la recette du cabillaud \u00e0 la cr\u00e8me au four, il n'est pas n\u00e9cessaire d'acheter du cabillaud grand ou tr\u00e8s grand, car le cabillaud sera tout d\u00e9chiquet\u00e9 et il est presque indiff\u00e9rent qu'il soit tr\u00e8s grand ou tr\u00e8s petit.<\/p>\n\n\n\n<p>Sans compter que la diff\u00e9rence de prix entre le cabillaud ordinaire et le grand cabillaud ou le cabillaud sp\u00e9cial est tr\u00e8s \u00e9lev\u00e9e. Par cons\u00e9quent, pour cette recette, nous pouvons utiliser sans crainte le cabillaud du type suivant <strong>cha\u00eene<\/strong> ou <strong>grandi<\/strong>Les deux conviennent.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Comment bien dessaler la morue<\/h3>\n\n\n\n<p>Lorsque je parle de dessaler la morue, je fais r\u00e9f\u00e9rence \u00e0 l'\u00e9limination de l'exc\u00e8s de sel que contient la morue s\u00e9ch\u00e9e, car si vous ne le faites pas, la morue deviendra tr\u00e8s sal\u00e9e, au point que vous ne pourrez pas la manger.<\/p>\n\n\n\n<p><strong>Premi\u00e8re:<\/strong> Placer les tranches de cabillaud s\u00e9ch\u00e9es dans un grand bol et rincer le cabillaud \u00e0 l'eau courante pendant 5 \u00e0 10 minutes jusqu'\u00e0 ce que la majeure partie du sel soit \u00e9limin\u00e9e.<\/p>\n\n\n\n<p><strong>Deuxi\u00e8me:<\/strong> Remplir le bol d'eau de mani\u00e8re \u00e0 ce que les tranches de cabillaud soient immerg\u00e9es, c\u00f4t\u00e9 peau vers le haut, puis mettre au r\u00e9frig\u00e9rateur.<\/p>\n\n\n\n<p><strong>Troisi\u00e8me<\/strong>Vous devrez changer l'eau du r\u00e9cipient. <strong>6 en 6 heures<\/strong>.<\/p>\n\n\n\n<p><strong>Chambre:<\/strong> Le temps de dessalage d\u00e9pend du type de cabillaud : 36 heures pour le cabillaud ordinaire, 48 heures pour le cabillaud adulte, 55 heures pour le grand cabillaud et 72 heures pour le cabillaud sp\u00e9cial.<\/p>\n\n\n<div  class=\"wp-block-ultimate-post-image ultp-block-0e7f9e\"><div class=\"ultp-block-wrapper\"><figure class=\"ultp-image-block-wrapper\"><div class=\"ultp-image-block ultp-image-block-none\"><img decoding=\"async\"  class=\"ultp-image\"  alt=\"Image\"  src=\"http:\/\/cozinhadave.com\/wp-content\/uploads\/2022\/09\/bacalhau-com-natas-no-forno-3.webp\" \/><\/div><\/figure><\/div><\/div>\n\n\n<h2 class=\"wp-block-heading\">Ingr\u00e9dients n\u00e9cessaires pour cette recette<\/h2>\n\n\n\n<p><strong>morue dessal\u00e9e<\/strong> - J'utilise habituellement de la morue s\u00e9ch\u00e9e et dessal\u00e9e de type courant ou adulte, que l'on trouve dans tous les hypermarch\u00e9s, mais je recommande de l'acheter en p\u00e9riode de promotions (\u00e9vitez de l'acheter pendant les p\u00e9riodes festives o\u00f9 les prix sont tr\u00e8s \u00e9lev\u00e9s).<\/p>\n\n\n\n<p><strong>Huile d&#039;olive<\/strong> - J'utilise g\u00e9n\u00e9ralement de l'huile d'olive Oliveira da Serra ou Gallo extra vierge, car il faut utiliser une huile de bonne qualit\u00e9, sinon le r\u00e9sultat final risque de ne pas \u00eatre \u00e0 la hauteur des esp\u00e9rances. Au Portugal, n'importe quelle \u00e9picerie de quartier ou supermarch\u00e9 local propose de l'huile d'olive, il suffit de regarder et de choisir. Au Br\u00e9sil, vous devrez proc\u00e9der \u00e0 une analyse plus approfondie, notamment en termes de prix.<\/p>\n\n\n\n<p><strong>Cr\u00e8me de lait<\/strong> - Une fois de plus, je vous recommande de choisir une cr\u00e8me de bonne qualit\u00e9 et d'\u00e9viter les marques douteuses, car cet ingr\u00e9dient fait une grande diff\u00e9rence dans le r\u00e9sultat final.&nbsp;<\/p>\n\n\n\n<p><strong>B\u00e2tonnets de pommes de terre<\/strong> - Choisissez une marque de chips qui ne soit pas trop sal\u00e9e, car cela pourrait compromettre le r\u00e9sultat final.&nbsp;<\/p>\n\n\n\n<p><strong>Sauce b\u00e9chamel<\/strong> - Je pr\u00e9f\u00e8re les faire moi-m\u00eame <a href=\"http:\/\/cozinhadave.com\/fr\/comment-faire-sauce-bechamel\/\">sauce b\u00e9chamel<\/a>parce que la qualit\u00e9 est bien meilleure et qu'il n'y a pas d'additifs tels que des conservateurs ou des colorants. Mais si vous ne voulez pas perdre de temps, vous pouvez acheter des sauces toutes pr\u00eates.<\/p>\n\n\n\n<p><strong>fromage mozzarella<\/strong> - La mozzarella est utilis\u00e9e pour donner une texture diff\u00e9rente, c'est la cerise sur le cabillaud \u00e0 la cr\u00e8me, l\u00e0 encore je vous recommande de l'utiliser. <a href=\"http:\/\/cozinhadave.com\/fr\/fromage-mozzarella\/\">fromage
