- 500 g of potato;
- 1 large carrot;
- 1 medium or small onion;
- 3 cloves of garlic;
- 500 ml of water;
- 3 tbsp of oil;
- 1 bay leaf;
- Salt to taste;
- Pepper and chopped coriander to taste.
In a pan with oil, saute the onion, garlic, and cilantro (these ingredients need to be chopped);
Then cut the potatoes and carrots into cubes and add them to the pot;
Add the water and let it cook over medium heat;
Add the pepper, salt and bay leaf;
Wait for the vegetables to cook until they are soft. This process can take 30 to 40 minutes;
Now put half of the mixture into a blender and blend until it becomes a cream;
Mix this cream with the rest of the soup in the pot and let it cook for a few more minutes;
If you prefer, remove the bay leaf before serving.
