Ingredients

  • 2 grated carrots;
  • 1 Cup of tea) cooked quinoa;
  • 2 tbsp of olive oil, preferably olive oil;
  • 3 tbsp of vinegar;
  • 6 chopped lettuce leaves;
  • 1 coffee spoon) of salt;
  • 1 diced cherry tomato into little pieces;
  • Ginger, arugula, salt and pepper to taste

Instructions

  • Remember to first cook the quinoa in water before you start preparing the recipe;
  • Done that, in a separate vessel, mix the carrot and quinoa;
  • Add the oil, vinegar, salt and ginger, mixing well;
  • Then add the arugula and tomatoes, always stirring well to mix all the ingredients;
  • Serve immediately.
