- 1 papaya (medium) very green, cut into thin strips
- 1 mango (medium) half green, cut into thin strips
- juice of 2 lemons
- ½ onion cut in four
- A little girl's finger pepper
- 1 coffee spoon) of apple cider vinegar
- olive oil to taste
- pinch of salt
- 1 shallow (soup) spoon of brown sugar
- 2 tbsp roasted peanut
Wash, peel and cut the green papaya into very thin strips and let it soak for about 3 days before making the salad, always changing the water to remove the bitterness of the papaya.
For the marinade, use a blender or food processor, add the lemon juice, onion, pepper, vinegar, olive oil, a pinch of salt and brown sugar, beat everything very well.
Assembling the salad, place the drained papaya and the mango in a salad bowl and drizzle with the marinade and mix well, place in the fridge for about 4 hours to absorb the marinade well.
As soon as you remove it from the fridge, add the chopped coriander and mix well and then the roasted peanuts. And serve next.
