As is customary in <a href=\"http:\/\/cozinhadave.com\/en\/\">Cozinhadave<\/a>We test existing recipes and make changes according to our gastronomic vision.<\/p>\n\n\n\n<p>So it's natural that our recipe is different from any other Portuguese recipe for cod with cream.<\/p>\n\n\n<div  class=\"wp-block-ultimate-post-image ultp-block-e17681\"><div class=\"ultp-block-wrapper\"><figure class=\"ultp-image-block-wrapper\"><div class=\"ultp-image-block ultp-image-block-none\"><img decoding=\"async\"  class=\"ultp-image\"  alt=\"baked cod fish with cream\"  src=\"http:\/\/cozinhadave.com\/wp-content\/uploads\/2022\/09\/Bacalhau-com-natas-no-forno-2.webp\" \/><\/div><\/figure><\/div><\/div>\n\n\n<h2 class=\"wp-block-heading\">What you need to know about cod<\/h2>\n\n\n\n<p>For this cod with cream in the oven recipe to work well, you need to know how to choose the cod you're going to use. It's not a super complex science, but there are several points to bear in mind.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Frozen Salted Cod vs Dry Salted Cod<\/h3>\n\n\n\n<p>When we choose the cod that we are going to use in our recipe, we must know which type of cod fish to use, whether salted dry cod or frozen desalted cod.<\/p>\n\n\n\n<p><strong>Frozen desalted cod<\/strong> - This cod is already desalted and ready to use in any recipe. On the other hand, this cod is usually more expensive than dried cod.<\/p>\n\n\n\n<p>I recommend using frozen desalted cod if your budget allows.<\/p>\n\n\n\n<p><strong>dry salted cod<\/strong> - This cod needs to be desalted and the larger the cod, the more days it will take to soak and desalt it.<\/p>\n\n\n\n<p>There are 4 types of cod:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Chain<\/li>\n\n\n\n<li>Grown<\/li>\n\n\n\n<li>Big<\/li>\n\n\n\n<li>Special<\/li>\n<\/ul>\n\n\n\n<p>The soaking process takes a long time (36 to 72 hours) and you need to change the water 3 to 4 times a day, not to mention that the smell of cod in the fridge is intense.<\/p>\n\n\n\n<p>If you prefer to save some money (sometimes quite a lot), then I suggest opting for dried salted cod.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/lh5.googleusercontent.com\/XyY8RxBAcqrU1Nhga8BMcMYw4CxLOFHt_mqLv0w2D8HK74-YdGSgiiaJ72AHkVU9i0c9UYoS6P1loeaS7zQ0z-74H3Xv_yneIi0vJSF1XzsKr-1duyMvBMG_dY-YzrkN2cM3BZnGcor5tkxKQRiIxDmhB72CDZPEyMjy4cxZizCUOJ3uaf2BmX2HsQ\" alt=\"baked cod fish with cream\"\/><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\">What kind of cod fish to choose for our recipe<\/h3>\n\n\n\n<p>For the cod with cream in the oven recipe, you don't need to buy tall or very tall cod, as the cod will all be shredded and it's almost indifferent whether it's very tall or very short.<\/p>\n\n\n\n<p>Not to mention the fact that the price difference between ordinary cod and large or special cod is very high. Therefore, for this recipe we can use cod of the following type without any fear <strong>chain<\/strong> or <strong>grown<\/strong>Both are suitable.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">How to desalt cod the right way<\/h3>\n\n\n\n<p>When I talk about desalting the cod, I'm referring to removing the excess salt that the dried cod has, because if you don't, the cod will become very salty, to the point where you won't be able to eat it.<\/p>\n\n\n\n<p><strong>First:<\/strong> Place the dried cod slices in a large bowl and rinse the cod under running water for 5 to 10 minutes until most of the salt has been removed.<\/p>\n\n\n\n<p><strong>Second:<\/strong> Fill the bowl with water so that the cod slices are submerged, skin side up, then refrigerate.<\/p>\n\n\n\n<p><strong>Third<\/strong>: You should change the water in the <strong>6 hours<\/strong>.<\/p>\n\n\n\n<p><strong>Fourth:<\/strong> The desalting time will depend on the type of cod, with ordinary cod taking 36 hours, grown cod 48 hours, large cod 55 hours and special cod 72 hours.<\/p>\n\n\n<div  class=\"wp-block-ultimate-post-image ultp-block-0e7f9e\"><div class=\"ultp-block-wrapper\"><figure class=\"ultp-image-block-wrapper\"><div class=\"ultp-image-block ultp-image-block-none\"><img decoding=\"async\"  class=\"ultp-image\"  alt=\"Image\"  src=\"http:\/\/cozinhadave.com\/wp-content\/uploads\/2022\/09\/bacalhau-com-natas-no-forno-3.webp\" \/><\/div><\/figure><\/div><\/div>\n\n\n<h2 class=\"wp-block-heading\">Ingredients needed for this recipe<\/h2>\n\n\n\n<p><strong>desalted cod fish<\/strong> - I usually use dried desalted cod of the current or grown-up type, which is available in any hypermarket, but I recommend that you buy it when it's on sale (avoid buying it during festive periods when prices are very high).<\/p>\n\n\n\n<p><strong>of olive oil<\/strong> - I usually use olive oil from Oliveira da Serra or Gallo extra virgin, as you need to use good quality oil or the end result may not be what you expect. In Portugal, any neighborhood grocery store or local supermarket has olive oil available, it's just a matter of looking and choosing. In Brazil, you'll have to do a more thorough analysis, particularly in terms of price.<\/p>\n\n\n\n<p><strong>Milk cream<\/strong> - Once again, I recommend that you choose good quality cream, avoid going for dubious brands, as this ingredient makes a big difference to the final result.&nbsp;<\/p>\n\n\n\n<p><strong>Potato sticks<\/strong> - Choose a brand of potato chip that is not too salty, as this could harm the final result.&nbsp;<\/p>\n\n\n\n<p><strong>Bechamel sauce<\/strong> - I prefer to make my own <a href=\"http:\/\/cozinhadave.com\/en\/how-to-make-bechamel-sauce\/\">bechamel sauce<\/a>because the quality is much better and there are no additives such as preservatives or colorings. But if you don't want to waste time, you can buy ready-made sauce.<\/p>\n\n\n\n<p><strong>mozzarella cheese<\/strong> - Mozzarella cheese is used to give a different texture, it is the cherry on top of cod with cream, here again I recommend using <a href=\"http:\/\/cozinhadave.com\/en\/what-does-mozzarella-cheese-taste-like\/\">mozzarella cheese<\/a> quality, so as not to penalize the final
