El pez ideal se pescaba lejos, en Terranova (en lo sucesivo, Canad\u00e1), donde se captur\u00f3 el primer bacalao en 1497.<\/p>\n\n\n\n<p>Posteriormente, el bacalao comenz\u00f3 a pescarse tambi\u00e9n en las costas africanas, y a partir de ese momento, el bacalao comenz\u00f3 a incluirse en los h\u00e1bitos alimentarios desde entonces hasta la actualidad.<\/p>\n\n\n\n<p>Debido a esta fuerte tradici\u00f3n, Portugal es conocido como uno de los pa\u00edses del mundo que m\u00e1s bacalao consume.<\/p>\n\n\n\n<p>Y remont\u00e1ndonos a la \u00e9poca de los descubrimientos, el bacalao se exportaba a todas partes del mundo, pues se pod\u00eda transportar seco y con sal para conservarlo durante varios meses en las traves\u00edas mar\u00edtimas.<\/p>\n\n\n\n<p>Por eso actualmente es un pescado de fama mundial, as\u00ed como los platos de bacalao portugu\u00e9s que han invadido las mesas de millones de personas de todos los rincones del mundo.<\/p>\n\n\n\n<p>Uno de los tantos platos creados por los portugueses fue el famoso bacalao con nata, del que os vamos a hablar en un momento.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Por qu\u00e9 funciona esta receta<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Es f\u00e1cil y r\u00e1pido de preparar y adem\u00e1s es una receta muy rica para comer con toda la familia.<\/li>\n\n\n\n<li>Es una buena receta para guardar en la nevera unos d\u00edas para volver a comer con el mismo sabor que el d\u00eda que se hizo.<\/li>\n\n\n\n<li>Es excelente para preparar comidas, por lo que puede hacer m\u00e1s para preparar varias porciones para comer en un momento dado.&nbsp;<\/li>\n\n\n\n<li>Puedes congelar el bacalao con nata durante semanas, lo que siempre viene bien, siempre y cuando lo calientes a baja temperatura para no provocar un choque t\u00e9rmico en la comida.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientes que necesitar\u00e1s<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><b>bacalao desalado<\/b>: Suelo comprar bacalao desalado cuando hago esta receta de bacalao con crema, porque es m\u00e1s pr\u00e1ctico. Si no puede comprar bacalao desalado, compre bacalao seco y desalelo como se explica a continuaci\u00f3n en este art\u00edculo.<\/li>\n\n\n\n<li><b>Aceite de oliva: <\/b>El aceite de oliva que siempre uso con las recetas de pescado es el aceite de oliva virgen extra Gallo o Oliveira da Serra, porque es el que es m\u00e1s saludable por su nivel de acidez adem\u00e1s de que no se mezcla con aceites de baja calidad, por lo tanto Puede que sea un poco m\u00e1s caro, pero al final merece la pena.<b>&nbsp;<\/b><\/li>\n\n\n\n<li><b>Crema de leche: <\/b>La nata debe ser de buena calidad, sobre todo con un alto porcentaje de grasa para dar consistencia a la salsa.<\/li>\n\n\n\n<li><b>Palitos de patata: <\/b>No debe tener demasiada sal para no da\u00f1ar la receta.<\/li>\n\n\n\n<li><b>Pan rallado: <\/b>Yo suelo usar cualquier marca de pan rallado, suelo comprar el m\u00e1s barato.<\/li>\n\n\n\n<li><b>Salsa bechamel: <\/b>La salsa bechamel la suelo hacer yo misma, por lo que nunca compro salsas prefabricadas, porque est\u00e1n llenas de conservantes con productos muy perjudiciales para la salud. Mira la receta y el video de la salsa bechamel a continuaci\u00f3n.<\/li>\n<\/ul>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"http:\/\/cozinhadave.com\/wp-content\/uploads\/elementor\/thumbs\/bacalhau-com-creme-de-leite-1-1-p4cs9o9c9k9xnpa4wy131bh7flhli54xez9cfjq7ac.jpg\" alt=\"bacalao con crema\" title=\"bacalao con crema agria 1\"\/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Preparaci\u00f3n del bacalao (Parte I)<\/h2>\n\n\n\n<p>Antes de comenzar es importante mencionar que la calidad de los filetes de bacalao est\u00e1 directamente relacionada con el resultado final que obtendremos. Por eso, te recomiendo que compres 3 filetes de bacalao de altura media y no filetes demasiado poco profundos.<\/p>\n\n\n\n<p>Si no puedes comprar bacalao desalado porque no lo tienes en tu regi\u00f3n o porque no es muy asequible, entonces siempre puedes comprar bacalao salado y desalarlo t\u00fa mismo.<\/p>\n\n\n\n<p>Cuece los 3 filetes de bacalao en agua caliente sin sal, porque el bacalao desalado ya tiene suficiente sal para esta receta.&nbsp;<\/p>\n\n\n\n<p>Luego, una vez cocido el bacalao, retirar con cuidado la piel, las espinas y finalmente desmenuzar y reservar.<\/p>\n\n\n\n<p>Luego haremos el salteado en una sart\u00e9n donde pondremos el aceite de oliva y prendemos el fuego hasta que el aceite est\u00e9 bien caliente.<\/p>\n\n\n\n<p>Luego salteamos la cebolla, el ajo, el laurel y por \u00faltimo el bacalao desmenuzado (que hab\u00edamos reservado) y la zanahoria.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"http:\/\/cozinhadave.com\/wp-content\/uploads\/elementor\/thumbs\/bacalhau-com-creme-de-leite-2-p4cs9o9c9k9xnpa4wy131bh7flhli54xez9cfjq7ac.jpg\" alt=\"bacalao con crema\" title=\"bacalao con crema agria 2\"\/><\/figure>\n\n\n\n<p>Dobla un poco m\u00e1s para saltear. Ahora agregue el paquete de paja de patata y mezcle lenta y uniformemente.&nbsp;<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"http:\/\/cozinhadave.com\/wp-content\/uploads\/elementor\/thumbs\/bacalhau-com-creme-de-leite-3-p4cs9o9c9k9xnpa4wy131bh7flhli54xez9cfjq7ac.jpg\" alt=\"bacalao con crema\" title=\"bacalao con crema agria 3\"\/><\/figure>\n\n\n\n<p>Tras empezar la preparaci\u00f3n del bacalao con nata, pasamos a la siguiente etapa, que es la preparaci\u00f3n de la salsa bechamel.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Preparaci\u00f3n de Salsa Bechamel (Parte 2)<\/h2>\n\n\n\n<p>La salsa bechamel es fundamental en el bacalao con nata agria, porque es lo que hace que este plato sea cremoso y muy rico.<\/p>\n\n\n\n<p>Esta salsa es una de las m\u00e1s tradicionales de la cocina francesa, sin embargo creo que ya la hab\u00e9is hecho de otra forma y con otro nombre\u2026&nbsp;<\/p>\n\n\n\n<p>Me refiero a la salsa blanca que solemos preparar en casa.<\/p>\n\n\n\n<p>La gran diferencia es que en el caso franc\u00e9s le ponen diferentes ingredientes que son tradicionales en su cultura, como es el caso de la leche sazonada en infusi\u00f3n con una mezcla de cebolla, nuez moscada y laurel y as\u00ed se hace la salsa original.<\/p>\n\n\n\n<p>Por aqu\u00ed usamos leche tradicional y as\u00ed no hay cambios en el sabor.<\/p>\n\n\n\n<p>&nbsp;Independientemente de c\u00f3mo se haga la salsa, \u00a1se utiliza en la preparaci\u00f3n de muchas recetas como veremos!<\/p>\n\n\n\n<p>Hacerlo <a href=\"http:\/\/cozinhadave.com\/es\/como-hacer-salsa-bechamel\/\">salsa bechamel<\/a> Es muy sencillo y bastante r\u00e1pido de preparar.<\/p>\n\n\n\n<p>Comenzamos derritiendo la mantequilla a fuego lento, luego a\u00f1adimos la harina de trigo y luego la leche caliente, removiendo constantemente hasta que hierva sin dejar que tome color.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"http:\/\/cozinhadave.com\/wp-content\/uploads\/elementor\/thumbs\/bacalhau-com-creme-de-leite-4-p4cs9o9c9k9xnpa4wy131bh7flhli54xez9cfjq7ac.jpg\" alt=\"bacalao con crema\" title=\"bacalao con crema agria 4\"\/><\/figure>\n\n\n\n<p>Luego d\u00e9jalo hervir durante 20 minutos a fuego muy lento para que se cocine la harina de trigo.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"http:\/\/cozinhadave.com\/wp-content\/uploads\/elementor\/thumbs\/bacalhau-com-creme-de-leite-5-p4cs9nbi2q8nc3bi2fmggtpqu7m8ag172uluy9rlgk.jpg\" alt=\"bacalao con crema\" title=\"bacalao con crema agria 5\"\/><\/figure>\n\n\n\n<p>Cuando est\u00e9 listo, retira del fuego y sazona con sal y pimienta al gusto y reserva.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"http:\/\/cozinhadave.com\/wp-content\/uploads\/elementor\/thumbs\/bacalhau-com-creme-de-leite-6-p4cs9p76geb7zb8rrgfplt8o0zcypu8nr3wtwtot44.jpg\" alt=\"bacalao con crema\" title=\"bacalao con crema agria 6\"\/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Montaje de bacalao con nata agria (Parte III)<\/h2>\n\n\n\n<p>Montar el bacalao con nata agria, si bien no es muy dif\u00edcil, tampoco es lo m\u00e1s f\u00e1cil, por eso os voy a explicar c\u00f3mo hacerlo paso a paso.<\/p>\n\n\n\n<p>Cuando tengamos lista la bechamel, colocar la nata (crema) en el bacalao estofado y luego la bechamel, remover todo muy bien para que se envuelva.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"http:\/\/cozinhadave.com\/wp-content\/uploads\/elementor\/thumbs\/bacalhau-com-creme-de-leite-7-p4cs9o9c9k9xnpa4wy131bh7flhli54xez9cfjq7ac.jpg\" alt=\"bacalao con crema\" title=\"bacalao con crema agria 7\"\/><\/figure>\n\n\n\n<p>Luego poner todo en forma rectangular, extenderlo bien y espolvorear con el pan rallado.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"http:\/\/cozinhadave.com\/wp-content\/uploads\/elementor\/thumbs\/bacalhau-com-creme-de-leite-8-p4cs9o9c9k9xnpa4wy131bh7flhli54xez9cfjq7ac.jpg\" alt=\"asamblea de bacalao\" title=\"bacalao con crema agria 8\"\/><\/figure>\n\n\n\n<p>Por \u00faltimo, m\u00e9telo en el horno precalentado a <b>170\u00baC<\/b> hasta que se dore.
